Here is what you need:
– 6 tablespoons butter
– 4 large yellow onions
– 1 tablespoon sugar
– 2 cloves garlic
– ½ cup cooking sherry
– 7 cups reduced-sodium beef broth
– 1 teaspoon salt (to taste)
– ¼ teaspoon dried thyme
– 1 bay leaf
In addition to the above ingredients, be sure to have sliced french bread and a variety of cheeses to put on top. Shredded Gruyere, elemental, Parmesan and mozzarella make a delicious combination.

Once the garlic has cooked for a minute, it’s time to add the sherry. This is the final step you need to supervise, the rest of the magic will happen in the slow cooker!
One you’ve transferred your onion mixture into the crock pot, it’s time to add the rest of your ingredients and forget about it! Add the broth, salt, thyme, and bay leaf, then cover and set on high for 4-6 hours. If you use the low setting, it will be ready in 8-10 hours.
Before serving, toast the bread and add it to your serving dish. Top the bread with your cheese mixture and pop the whole thing into the broiler until the cheese is golden brown and melted. This will be the perfect cheesy contrast to the hot, flavorful soup. You may even want to make extra to serve on the side!
